Masala Papad



Masala Pappad is great dish for starter or snack time.


Yield:  4 Serving

Ingredients:
            Pappad                         8 (Punjabi Masala)
            Onion                          2 (Chopped into small cubes)
            Green Chili                  2 ( Finely Chopped)
            Tomato                        2 (Chopped into small cubes)
            Salt                              As per taste
            Cumin Powder            1/2 Teaspoon (Dry Roasted)
            Cilantro                        a small Bunch (Finely chopped)

Direction:

   We have two ways for cooking pappad. The pappad is spicy and if you want to keep it spicy as it is then roast the pappad over the burner. If like to reduce the spiciness then deep fry in oil.

After cooking Pappad we need to prepare masala. Mix onion, tomato, green chili, cumin powder and salt altogether and wait for 5 minutes so it will left some water. Now drain water and ready with masala.


Spread the masala over the Pappad and garnish with finely chopped cilantro.

All seasons and festivals favourite dessert.



Yield:  4 Serving

Ingredients:
            Rice(sons masuri)                 1 1/2 Cup 
            Milk                                      6 Cup
            Saffron                                 a pinch
            Sugar                                   1/2 cup
            Almond                               7-8 (Grated them or slice it)
            Pistachio                              7-8 (Grated them or slice it)
            Cashew                                10-12 half pieces
            
Direction:

Wash the rice 3 times with water or until you can see rice in clear water.Here we require to remove white starch from rice and thats the reason we are washing it properly.

Cook Milk until comes to first boil ,it would take approximate 12 minutes. Add washed rice and continue stir in short span of times as rice may stick to bottom.

Either grate Almond and pistachios or slice them with knife. Cashew make it in two half pieces.

Once the rice seems cooked then add cardamom powder and dry fruits (almond,cashew and pistachios).

Add Sugar and saffron and cook for another 10 minutes and you will see that milk become a little less after boiling which immerse in the great taste as it's cooked well.

Serve Hot or Cool the yummy dessert.

NOTE: Adding the Sugar in the end just because sugar melts and it will make milk burn in the bottom as we not stirring all times.

Poha / Avalakki


This dish is very easy to make  for breakfast or evening snacks.

Yield:  4 Serving

Ingredients:
            Thick Poha                  3 Cup (Big) Also know as Thick Pressed rice,Flatten rice.
            Onion                          1 (Small, Finely Chopped)
            Green Chili                  2 ( Cut into Length wise)
            Oil                               2 Teaspoon
            Potato                          1 (Cubes size cut)
            Pea                              1/2 Cup
            Salt                              As per taste
            Sugar                           1/2 Teaspoon
            Mustard Seeds             a pinch
            Curry Leave                2 Block of leaves
            Thin Sev                      1/2 Cup
            Lemon                         1 Teaspoon (squeezed Juice of Lemon)
            Turmeric Powder         1/2 Teaspoon
            Cilantro                        a small Bunch (Finely chopped)
Direction:

Wash the Poha with water one time and then keep it for 10-15 minutes in the remaining little water left after the drain so that it will turn soft.

Now start for Tadka :Heat the oil in the wok and once oil start smoking add Mustard seeds ,Curry Leave. After a while add Onion and Potato and cover the lid for 5-7 minutes. Now stir and check if potato cooked by pressing the one potato cube if it breaks into two. If the Potato is not properly cooked then again cover lid and let it cook for another 3-5 minutes and check in between if it not stick to the bottom.

Once potato are done add Pea and cover the lid for 2 minutes. In the soft poha now add Salt ,Turmeric Powder and Sugar mix well with fork as now it's turn into yellow color. Now add the poha into masala and mix well with soft hand so it won't turn messy.

Cover lid for 3 minutes and add now finely chopped Cilantro ,Lemon Juice and mix well.

Serve hot with Thin Sev garnish.
